Australian Wagyu

Australian F1 Wagyu — a first-generation cross between a Kuroge Washu (pure Japanese Wagyu) bull and a Black Angus cow, raised in Australia on a grain diet. With 50% Wagyu genetics, these animals develop marbling between BMS 6/7 and BMS 9+, depending on the cut and selected batch. All selected by batch with confirmed BMS, vacuum-frozen.

What is the difference between Australian and Japanese Wagyu?

Australian Wagyu crosses Japanese genetics with Black Angus or local breeds, raised on large pastures. It has high marbling but is generally less intense than 100% Japanese Wagyu.

What is a BMS score?

The Beef Marbling Score (BMS) is the Australian marbling scale, from 1 to 9+. The higher the number, the greater the amount of visible intramuscular fat in the cut.

Is American Wagyu the same as Australian Wagyu?

They are similar in origin—both cross Japanese Wagyu with local breeds—but vary in diet and fattening time, resulting in slightly different flavour profiles.
